Delicious, satisfying, and endlessly adaptable, this Salad Niçoise is perfect for meal prep, poolside lunches, or elegant summer entertaining. A timeless dish that balances nutrition, flavour, and ease in every forkful.
Why we love it:
-
Balanced nutrition: With protein from tuna or eggs and healthy fats from olives, this is a complete, energising meal.
-
Fresh and seasonal: Featuring the best of summer’s bounty (think vine-ripened tomatoes, tender green beans, and crisp mixed leaves), it’s your go-to for warm-weather meals.
-
Gut-boosting fibre: Crunchy veg, leafy greens, and beans deliver satisfying fibre to support digestion and gut health.
-
Omega-3 punch: Tuna adds brain and heart-health benefits through its omega-3 content.
-
Built in convenience: Assemble ahead as a light lunch, a nourishing one-dish dinner, or an elegant side for BBQs and alfresco gatherings.
Tips:
-
Blanch green beans until just tender-crisp to preserve their vibrant colour and zing.
-
Choose high-quality tuna in spring water to boost both taste and texture.
-
Finish with a sprinkle of fresh parsley or chives, a few capers, or even a dollop of Dijon mustard for extra tang.
