This salad is packed full of summer freshness. It serves four as a light bite or starter and serves two for a mains.

Instructions

Step 1 

Whisk together the ingredients for the vinaigrette, then set aside.

Step 2 

Cook your broad beans and peas by boiling until just cooked. Drain and set aside.

Step 3 

Once cooled, toss with the remaining ingredients and serve with a drizzle of the vinaigrette.

Ingredients

  • 500g broad beans, fresh or frozen
  • 300g peas, fresh or frozen
  • 200g spinach
  • 1 cup mint
  • 1/2 cup fresh spinach, finely chopped
  • 80g feta, crumbled
  • 50ml olive oil
  • 1 tbsp apple cider vinegar or white wine vinegar
