Asian watermelon & sesame salad

Light, juicy, and bursting with colour, this salad is the refreshment your summer table’s been waiting for. Sweet, hydrating watermelon pairs with crisp veg and a zingy Asian-inspired dressing, while toasted sesame adds a nutty depth and a whisper of healthy fats for satiety and flavour balance.

This is the perfect side for BBQs, light lunches or a vibrant starter when you want something fresh, fast and feel-good.

Instructions

Step 1 

Whisk ingredients for the dressing together and set aside.

Step 2 

Cut up all melons and remove seeds, chop into small mouth sized cubes.

Step 3 

Cut cucumber in half and scoop out the seeds. Slice to give semi circles. Combine melon. cucumber and tomatoes

Step 4 

Mix dressing ingredients and pour over for a refreshing summer salad. Sprinkle with sesame seeds.

Ingredients

  • 1/2 watermelon
  • 1 honeydew melon
  • 1/2 cantaloupe melon
  • 1 small cucumber
  • 4 tomatoes, halved
  • 2 tbsp walnuts, chopped
  • 1 sprig mint leaves, chopped
  • 1 small red onion, finely chopped
  • 1 tbsp sesame seeds

For the dressing:

  • 1 tbsp lime juice
  • 1 tsp coconut nectar
  • 2 tsp sesame oil
  • 1 tsp tamari
  • 1 tsp finely grated ginger
