Mediterranean vegetables with bean mash

We love this dish, whether we're sitting out on a warm summer's night or around the stove in winter. Hoping it might become one of your favourites too.
Instructions
Step 1 -
Gently fry the vegetables in oil until softened
Step 2 -
While the vegetables are frying, heat the beans in a saucepan with stock until heated through, before mashing and stirring in the coriander
Step 3 -
Divide portions of the mash into two bowls, then top with vegetables and serve with lemon
Ingredients
- 1 pepper, deseeded and sliced
- 1 aubergine, sliced
- 2 courgettes, sliced
- 2 tbsp olive oil
- 1 can of cannelini drained and rinsed
- 100ml stock
- 1 clove garlic, crushed
- 1 tbsp chopped coriander
- Lemon wedges to serve
