This take on avocado on toast features mozzarella balls, cherry tomatoes and a drizzle of balsamic vinegar for a special bruschetta.

Instructions

Start by grilling your bread until golden and crisp. Top with the avocado, tomato and mozzarella slices. Scatter over the basil, if using, and serve with a drizzle of balsamic and sprinkle of chilli flakes.

  • 4 slices sourdough bread
  • 1 medium avocado
  • 12 cherry tomatoes
  • 1 container of mini mozzarella balls
  • Handful of fresh basil
  • 1 pinch chilli flakes to serve
  • Drizzle balsamic vinegar
