Squash & Apple Soup with Fried Sage

This comforting Squash & Apple Soup with Fried Sage is a perfect harmony of sweet and savoury. Roasted butternut squash and crisp apples create a silky, gently spiced base, while crispy fried sage adds an aromatic, earthy finish that lifts every spoonful. It’s warming, nourishing, and full of seasonal flavour—ideal for cosy lunches, elegant starters, or a soothing supper. A simple, wholesome dish that feels like a hug in a bowl.

Instructions

Step 1 -

Add oil/butter to pan and gently fry onions until slightly soft. Add all other ingredients except the cream and bring to the boil. Simmer until the butternut squash is soft, approximately 30 minute. Allow to cool slightly.

Step 2 -

Once cool enough blend the soup until totally smooth and return to the pan on a low heat. Season to taste.

Step 3 -

To prepare the topping heat up the olive oil and add the sage leaves to fry them until they start to crisp. Remove from the pan and place on a paper towel to dry.

Step 4 -

Add the cream to the soup and turn up slightly to achieve serving temperature. Serve with a ladle and top with sage leaves. Enjoy!

  • For the soup:
  • 1 tbsp olive oil or butter
  • 2 cups chopped onion
  • 4 cups peeled and cubed butternut squash
  • 1 large apple peeled, remove core and chop
  • Few sprigs sage leaves
  • 1/2 cup coconut milk or double cream
  • Pepper and salt to taste
  • For the topping
  • 2 tbsp olive oil
  • handful of fresh sage leaves
  • Cream or coconut milk to drizzle
