Mackerel and Beetroot Salad

Mackerel salad is a favourite spring and summertime salad in our house. The combination of salty fish and crispy fresh salad works so well together.

Ingredients
 

  • 2 Smoked mackerel fillets
  • 4 Beetroot small
  • 200 g Mixed salad leaves including spinach
  • 1 cup Cooked quinoa
  • 50 g Feta cheese chopped
  • Favourite dressing to serve

Instructions
 

  • Toss all salad ingredients together.
  • Serve in bowls with spoonfuls of the yogurt dressing.
