This is a super refreshing hydrating jelly, perfect for any time of day, even that morning after feeling. H3O Hydration will energise and hydrate you in no time at all. You can use conventional jelly if you like but we used agar agar a vegan alternative. We used blackberries and elder flowers in the recipe as H3O Hydration contains blackberries and elder flowers.

Instructions

Step 1 -

Strawberries are slightly acidic so the recipe uses slightly more agar agar than usual to ensure that the mixture sets. Make up 1/3 of the jelly at a time so that you can set in layers and have a good distribution of fruit throughout.

Step 2 -

Add 3 teaspoon agar agar to 1/2 litre of water and bring to a boil and allow to simmer for around 5 minutes. Ensure that all agar agar is dissolved then add H3O Hydration, maqui berry powder and fruit.

Step 3 -

Put flowers in the bottom your mould and add mixture on top - put in freezer to quick chill for 20 minutes then put on one side in the fridge.

Step 4 -

Repeat this process another 2 times - without putting the flowers in. You can put the flowers on the last layer at the bottom if you wish. - Return to freezer for 20 minutes and then the refrigerator to set.

Step 5 -

Once set, gently tip out on to serving plate or tray and decorate.

  • 1/2 cup Blackberries
  • 1 cup Strawberries
  • 1 1/2 l Water
  • Elder flowers to serve
  • 1/2 tsp Maqui berry powder
