We've all had sweet potato chips but why not spice things up a little with these delicious carrot fries. They take literally minutes to prepare and make an amazing dip or side dish to a mains.
Preheat oven to 200C.
Place the sliced carrots into a bowl and toss with the oil, salt and pepper, arrowroot and optional herbs (we used 1 tsp paprika). Combine until all fries are well coated.
Line on a baking tray and bake for 40 minutes, turning half-way through cooking, or until golden and crisp.
Scatter over chopped coriander and serve with your choice of dip, or as a side.
